Maya's Baked Ziti

Serving: 4-6​

Ingredients:
  • 1 box of penne pasta (healthier options: whole grain, or red lentil)
  • 1 pound of ground beef 85% lean/ 15% fat (healthier option: ground turkey)
  • 1 large jar of Prego Marinara Mushroom Sauce 
  • 1 cup of shredded mozzarella cheese 
  • 1 cup of shredded pepper jack cheese 
  • Seasonings: sea salt, black pepper, paprika, garlic salt, parsley, and Worcestershire sauce  
Instructions:
Pre-heat oven 425 F
  1. Cook pasta one minute shy of the directions and drain.
  2. Add beef or ground turkey to large sauce pan on medium heat and cook until beef is fully done. Add marinara sauce and let it simmer for 10 mins.
  3. Add half of the pasta in a 9x 13 baking dish; cover that half in cheese, and then add the other half in with another layer of cheese and bake uncovered for 30 mins.
  4. To make it creamier add in sour cream.
  5. Serve and enjoy!

Nuggets & Waffles w/ Potato Hash

Serving: 2-3 people


Ingredients:
  • Chicken Nuggets
    • 1 pound Chicken breast (boneless and skinless)
    • 1/2 cup Flour
    • 2 Eggs
    • 3/4 cup Bread crumbs
    • 1 teaspoon Dried parsley
    • 1 teaspoon Seasoning salt
    • 1/4 teaspoon Pepper
  • Waffles
    • 3 1/2 cups of Aunt Jemima waffle mix
    • 2 1/2 cups of water
    • Pam non-stick spray 
  • Potato Hash 
    • One 28 oz bag of Great Value Southern Style O'Brien Hash Browns with Onions & Peppers
    • Avocado oil 

Instructions: 
Chicken Nuggets-
  1. Preheat oven to 400 degrees F. Prepare a baking dish with cooking spray and set aside.
  2. Cut your chicken into bite-size nuggets and set aside. In three separate bowls add flour to one, beaten egg to the second, and bread crumbs with parsley, seasoning salt, and pepper.
  3. Place your chicken nugget into the flour and coat. Dunk into beaten egg and then coat in bread crumbs. Repeat with all nuggets and place them in your prepared baking dish.
  4. Bake for 10 minutes flip all nuggets and return to the oven for 10 more minutes. 
Waffles-
  1. Mix 3 1/2 cups of Aunt Jemima's waffle mix with 2 1/2 cups of water in a mixing bowl.
  2. Spray Waffle makers with non-stick spray.
  3. Pour enough of the mixture in the waffle maker to one waffle. (should make at least 5 medium sized waffles)
Potato Hash-
  1. Pour entire bag of hash in a large sauce pan on medium heat, drizzle avocado oil, add in some sea salt and pepper to taste. (cook for 20-25 mins)
Serve and enjoy!

James K's BBQ Chicken Wings

Total Time: 60 mins 

Ingredients:
  • 1 tray of chicken wings (8 full sized wings should be included)
  • Marinade (worchestire sauce, terikayi sauce, lemon juice)
  • Sweet Baby Ray's Bbq Sauce (you can use your fav bbq sauce)
  • Seasonings: sea salt, black pepper, paprika, parsley, and garlic powder
Instructions:
  1. Pre-heat oven to 400 F
  2. Wash wings off and place them in marinade for 20 mins, let them chill in the fridge.
  3. Take wings out of the marinade, season them with listed seasonings generously.
  4. Then place in oven for 25 mins; take them out and douse them in bbq sauce and then place them back in the oven for 10 mins.
  5. Let cool for 5 mins, then enjoy!

Tailgate Turkey Sliders

Serving: 4 people 


Ingredients: 
  • 1 pack of Hawaiian Rolls 
  • 1 pack of Honey Roasted Turkey Meat 
  • Ground Stone Mustard 
  • 1 pack of sliced PepperJack cheese 
Instructions: (Pre-Heat oven to 425 F)
  1. ​Slice Hawaiian Rolls in half.
  2. Place 4 slices of pepper-jack cheese on the bottom half of the rolls, and then add turkey meat. 
  3. Spread ground stone mustard on top of meat, and complete step 2 again. 
  4. Place the top half of the rolls back on to make a sandwich and then spread more stone ground mustard on top. 
  5. Slice and serve!

Fajita Chicken Casserole

Cook Time: 40 mins
Total Time: 1hr
Serving: 4 people 

Ingredients:
  • 4 small chicken breasts skinless, boneless – 
  • 2 bell peppers, red, yellow, and orange (seeded and cut into strips)
  • 1 medium onion, chopped
  • 1 teaspoon cumin powder  
  • 1 1/2 teaspoon chili powder 
  • 1 teaspoon garlic powder
  • 2 teaspoon paprika 
  • Sea salt and black pepper to taste
  • 1 tablespoon vegetable oil  
  • 1 1/2 cups shredded mozzarella  
  • Parsley for garnish
Instructions: 
  1.  To cook your fajita chicken casserole recipe: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Place chicken breasts on a shallow plate. Sprinkle cumin, chili powder, garlic, paprika, salt and pepper on both sides. Keep some of the spices for sprinkling over the vegetable.
  3.  Arrange chicken breasts into the prepared baking dish, and drizzle with oil. Top chicken breasts with the bell peppers and onion, then sprinkle some of the remaining fajita seasonings Finish with shredded mozzarella cheese on top.
  4.  Bake fajita chicken casserole for 35 - 40 minutes  You can broil your fajita chicken casserole for 2 minutes at the end to crisp up the top if you like. 
  5. Serve and enjoy!
