"Mapp" Out Your Mornings

Breakfast is one of my favorite meals of the day. So, I truly hope that with sharing these recipes that it becomes yours too!

Potato Hash Casserole

Prep Time: 10 mins 
Cook Time: 1 hour and 10 mins 
Serving: Up to 6 people

Ingredients:
  • 1 pack of ground turkey 
  • 1 yellow onion, chopped, sautéed in turkey 
  • 1 green bell pepper, chopped 
  • 20 oz bag of frozen diced hash browns 
  • 2 cups of shredded mozzarella cheese
  • Worcestershire sauce 
  • Seasonings: sea salt, black pepper, parsley, and season all salt
Instructions:
  1. Pre-heat oven to 350F. Spray 9 X 13 casserole dish with cooking spray.
  2. Prepare ground turkey, bell pepper, and onions in a large sauce pan on high heat. Season with listed seasonings and Worcestershire sauce.
  3. Once meat is done mix the potatoes, and then pour the mixture in the casserole dish and bake for for 20 mins.
  4. After baking the dish for 20 mins pull it out and sprinkle the cheese on top and bake for another 10 mins.
  5. Serve and enjoy!

Triple Berry Kiwi Smoothie

Cook Time: 10 mins
This recipe is dairy-free. gluten-free, and vegan. 

Ingredients: 
  • 1 cup of frozen strawberries 
  • 3/4 cup of frozen raspberries 
  • 1/2 cup of frozen blueberries 
  • 2 kiwis peeled 
  • 1 cup of orange juice 
Instructions:
  1. Place frozen fruit in a blender and let them thaw for about 10 mins.
  2. Blend them together, then serve and enjoy. 

Veggie Egg Muffins

Prep Time:10 mins
Cook Time: 30 mins
Total Time: 40 mins . 

Ingredients: 
  • 8 large eggs 
  • 1 bag of mozzarella cheese
  • Orange and Green bell pepper (chopped)
  • Half of onion (diced)
  • Half of bag of spinach 
  • Sea salt & black pepper to taste + a pinch of parsley 
  • Avocado oil
Instructions:
  1. Pre-heat oven to 375F. Spray a 12- cup muffin with non-stick cooking spray. 
  2. Mix all ingredients listed in a medium sauce pan with avocado oil. Add in sea salt and black pepper for taste. 
  3. Then pour in the muffin pan evenly.
  4. Place in oven and cook for 30 mins, take them out and let them cool for 10 mins, then serve and enjoy!

Strawberry Cream Cheese Toast

Cook Time: 5 mins
Serving: 1 person

This is one of my go to breakfast meals because it's quick and delicious!

Ingredients: 
  • 2 slices of Ezekiel bread
  • 2 tablespoons of strawberry cream cheese
  • 4 fresh strawberries slice
  • A handful of blueberries 
Instructions:
  1. Pre-heat oven to 350F. Place bread in oven for 10 mins until it crisps.
  2. Spread strawberry cream cheese on each slice of toast, and add sliced fruit on top.
  3. Serve and enjoy!
